Fermentation and ageing:

After a careful selection of grapes,

fermentation of 15-20 days at controlled

temperatures in stainless steel, coneshaped.

Malolactic fermentation in

stainless steel. Following maturation for

two years in the big barrels and partly in

barriques and tonneaux of first and

second passage. Ageing in the bottle

about 6 months.
